Grape varieties: Sangiovese, Ciliegiolo
It is a product made from organic Sangiovese grapes of two different clones with a small part of Ciliegiolo grapes.
Thanks to spontaneous fermentation it has character and easy drinking. Excellent when young but surprising if left to age in the bottle for a period of up to 5 years and more.
Pairings: piadina romagnola with cured meats, pasta with ragù, stewed cuttlefish

VINIFICATION METHOD
The grapes are vinified at a controlled temperature, around 28°, in stainless steel tanks.
We use a short maceration technique with daily pumping over.
Maturation takes place in stainless steel tanks for 10 months and then finishes in the bottle for at least 2 months.CHARACTERISTICS OF THE SOIL AND THE VINEYARD
Our Sangiovese vineyards were planted in 2005 and 2006 on an area of approximately 5 hectares.
The soils are medium textured with a prevalence of clay with sand and silt.
The organically certified grapes come from the Poggio and Quercia farms in the hills of San Pietro di Ozzano Emilia in the Colli d'Imola DOC area in the province of Bologna at an altitude that varies between
80 and 170 m above sea level
The orientation of the rows varies depending on the plots with a prevalence of north-south.
The favourable and particular microclimate, characterised by a high day-night temperature range and excellent ventilation even in the
summer period, allows us to obtain high quality grapes and complex wines characterised by high acidity and freshness.DATA SHEET
