Dracone - Colli d'Imola Rosso DOP

Dracone is produced by the harvest of Merlot, Cabernet Franc and Petit Verdot grapes, which are usually performed through the month of September.
The grapes are exclusively grown into the vineyards of the property “Palazzona di Maggio”, into the DOC Colli di Imola region.

The making involves a temperature-controlled fermentation.
Moreover, a post-fermentation skin maceration is performed in the best vintages.

The maturation takes place for at least 18 months, part into stainless steel containers and a about 25% quote into tonneaux oak barrels (500 Lt).

Tasting notes and food pairing - Colli d'Imola Rosso DOP

Color: dark ruby red.

Aromas: complex aromas of red fruit jam with hints of plum, currant, dry tobacco and black pepper.

Taste: ripe and rounded, with a great balance and a long final. Presence of noticeably soft tannins.

Pairing: Pasta with bush meat, roasted meet, beef barbequed. Aged cheese like Parmigiano Reggiano o Pecorino.
